After winter break the delicate leaves and first saplings (flush) grow. These first leaves are very rich in content and unfold an especial flavor. This tea tastes light and tangy so you can get the impression, as if the tea leaves are not completely fermented. However this is exactly the typical characteristic of the first flush
Darjeeling . The delicate first flush tea has got a bright color and many “green tips”, the silvery-green tips. Only the first two leaves and the bud are picked. That is why it is called “Two Leaves and a Bud”. At the beginning only a few fresh leaves can be picked and so only a small quantity of high-quality tea develops (invoice). Usually there is a harvest about 80 up to 100 kg per invoice. In order to get the tea as fast as possible the tea is penetrated. In former times the tea-klipper took that over to start the new tea season. That is why the tea is called “Flight Tea”.
